Caramel Nut Brownies

Scott came home from work a couple of weeks ago and went on and on and on about some brownies that his co-worker brought in. Of course I was totally irritated that he never goes on and on about anything I make and even more irritated that someone could BAKE anything better than me. I love to bake and I think I'm a pretty darn good cookie baker. So I was intrigued. I told him to get the recipe. It took forever but he finally emailed it to me. Thanks to Greg Mundy from City of Scottsdale for this unbelievable recipe. Let me warn you...they are so sweet they will make your jaw hurt...but it's a good hurt, trust me. I ate these brownies for breakfast, for lunch, for dinner, for my midnight snack, they were that addicting. I also gained 10 lbs...thanks alot Scott...and Greg...for that matter!

Caramel Nut Brownies

1 pkg 11 oz milk chocolate chips
1 bag 14 oz caramels (Kraft are easier to unwrap)
2/3 cup evaporated milk (divided in half)
1 pkg german chocolate cake mix
1/2 cup butter
1 1/2 cups walnuts chopped


Preheat oven to 350 degrees. Combine 1/3 cup of evaporated milk, butter and cake mix Mix Well, dough will be stiff. Press half of cake mix into greased 9x13 pan.

Bake at 350 degrees or 6 minutes. While base is cooking, unwrap caramels.... thanks for the help Syd...and might I say...very snappy scarf you have on...

Melt caramels with 1/3 cup of evaporated milk over low heat, stir until smooth. (This can be done in the microwave, stir every 45 seconds.)


Remove Base from the oven and sprinkle with 1 cup of walnuts

and chocolate chips

and top with melted caramel mixture.

Drop remaining cake mix by spoonfuls on top of caramel.

Sprinkle with remaining walnuts and press into caramel.


Bake a 350 degrees for 20 minutes.


Now folks, let me tell you...the most torture-ish (is that a word?) part of this whole recipe...you have to wait for almost a day to eat these. The caramel is so gooey that if you try to cut them before the caramel hardens, they will completely slide apart...trust, me, I made this mistake. I made them in the evening and we didn't actually get to eat them until the next day....it was torture! But I well made up for it the next 3 days...I think I ate 3/4 of the pan...I'm getting sick just talking about it....I can't wait to make more! What can I say...I'm a glutton.

This looks SO good, it would put Bart in a coma, seriously. I love brownies! There are so many different ways to make a great brownie and it looks like you did it!

It looks yummy... ;)I will definately try this one too...I am just starting to get into the whole baking thing...and am working on improving it :) Coma here we come!!!!!
