Mexican On a Meeting Night

In honor of National Rottiserie Chicken Day....
It's o.k. not to dine of carbs at dinner time. This is a great recipe that is high protein and low on carbs. Lots of taste and texture, we love it and I make this dish at least once a month. It's delish, simple and easy to make. Perfect for meeting nights when you feel like time is limited, enjoy!
1 rottiserie chicken
2 cups of cheese (I use Mexican cheese)
1 can of enchalada sauce
1/2 red onion, chopped
1 small can of green chilli, diced
1 tub of sour cream
Shred chicken up, I use both white and dark meat in this dish. Add diced onions and can of green chilli to chicken as well as 1 1/2 cup of cheese.
Put 1/2 of the sour cream into the enchalada sauce and mix well. Adding sour cream makes the sauce milder so even kids would eat it! Plus it gives it a great texture to the sauce and chicken filling.
Now pour the sauce mix over your chicken, cheese, chilli and onions and mix WELL.


Add the remaining amount of cheese on top of the chicken/sauce blend. Cover with foil and bake for 25 minutes at 350.
Serve with sour cream and a side of beans.

Mandy, it's such an easy and inexpensive recipe, we love it. Guilt free without the tortillas. Let me know when you try it, it's yummers!
