MEATLESS MONDAY - Spinach Artichoke Pesto Pita Pizza

We have started doing Meatless Monday a few months ago. I can't lie...it's been a little rough. We are meat eaters in this family but our docs have told us to cut back on our red meat consumption and meat in general to give our bodies a break. I'm thinking, NO PROBLEM, how hard can it be, right? WRONG! If you're not used to a vegetarian diet, it's a little scary and frustrating coming up with main meals that make you feel full and satisfied. Well this pita pizza hit the spot. Not only was it delicious but it was probably the fastest meal I have ever made for dinner, no joke! I was in such a hurry to get my daughter to dance I bought the ingredients, ran in the door and had this on the table in 10 minutes. It was tasty, filling and easy...best COMBO ever when cooking dinner.

SPINACH ARTICHOKE PESTO PITA PIZZA
Whole Wheat Pita Bread
Pesto
Can of artichokes hearts, roughly chopped
Fresh spinach
Mozzarella Cheese, shredded
Parmesan Cheese, shredded
Freshly ground black pepper
I didn't include measurements because it's really all up to how much you like and how many family members you have to feed.
Spread pesto over the pita bread
Add the spinach, artichokes, and mozzarella and Parmesan.
Season with black pepper.
Place pitas on a baking sheet and stick under a preheated broiler for about 5 minutes or until your cheese is melted and the top starts to brown.
Your body and your heart will thank you for this meatless dish :)
I got this recipe off the Meatless Monday website. They have some great ideas...check it out: www.meatlessmonday.com

I love artichokes. That looks so tasty! And if you ever want it with some meat, just throw some chicken pieces on there. :)

This looks great. Eating meatless is easy once you get the hang of it. It's really important to have lots of legumes and whole grains like quinoa, brown rice, whole wheat couscous, etc. Together with veggies they make complete proteins.

We don't do meatless monday per say, but i at least try to do meatless once a week. Even stuffed shells with tomato sauce is good, toss a little spinach in with the ricotta in your shelss... mmm

That looks beautiful! I have a local friend who does meatless Mondays too. I haven't tried it yet. You saying it was difficult is a little intimidating!

Looks great! I tried talking my hubs into meatless Monday, but he gave me a sad face every time I mention it.

You are quick! Thank you, as always, for visiting and commenting. I had my own meatless Monday yesterday too. Portobello Mushroom burgers. While my sons thought the huge huge mushrooms were "disgusting", my hubby and I quite enjoyed them!

Wow! This looks amazing. I'm all for quick and easy. And tasty to boot? Bonus!

We've been doing Meatless Monday for a year now. It was a bumpy start for us too, but we're rockin' now! I recently started a Meatless Monday blog carnival {Midnight Maniac Meatless Mondays}. It's a great place to get meatless meal inspiration.

I would like to invite you to add your meatless links too. This post is perfect for the carnival!

Hope you will join and help spread the Meatless Monday movement!

I'm in LOVE with pesto on pizza right now - it's so tasty and the olive oil from the pesto makes the pizza crust nice and crispy - yummy!!

this pizza is great... surely it's not too hard to skip meat one day a week? but then I guess I live with a veggie and have to be creative on a regular basis. I also wanted to say how much I LOVE your photography. It's so clear and clean looking, do you use a special light-box to achieve these shots?
