Broiled or Grilled Salmon with Creamy Lemon Sauce

WOW! This was tasty! We have been trying to get more fish in our diet and I am a HUGE fan of lemon. I saw this recipe in the South Beach Diet cookbook and I had to try it. This dish is virtually carb free. It was just amazing. So lemony and the capers just burst with flavor. I loved it and so did Scott. I broiled one piece of salmon and grilled another piece. I wanted to taste the difference. Hands down the grilled salmon took the prize but the broiled was very good as well. This recipe is super easy and super fast.

Salmon with Creamy Lemon Sauce
1 tablespoon extra virgin olive oil
1 clove garlic, minced
1/4 cup lemon juice
(I used fresh squeezed lemon,
I think it's so much better than store bought lemon juice)
2 tablespoons capers
1 teaspoon lemon-pepper seasoning
1/2 cup low fat sour cream
1 1/2 pounds salmon fillet

Preheat the oven to 350 or fire up the grill. Coat a baking sheet with cooking spray.
Heat the oil in a small saucepan over medium heat. Add the garlic and cook for 1 minute. Reduce heat to low. Stir in the lemon juice, capers, and lemon-pepper seasoning and cook for 5 minutes. Add the sour cream and cook for 5 minutes, or utnil heated through.
Meanwhile, place the salmon on teh prepared baking sheet and bake for 20 minutes, or until the fish is just opaque. Or throw the salmon on the grill. Grill until fish is flaky. Serve with the sauce.

  2. OMG, is it wrong to crave salmon at9:30 in the morning?? Seriously, Jaime, that looks so good. I have written down the ingredients to make it tonight, I love lemon and I love CAPERS!! Delish! Bravo!

  3. O.k., so I made this last night and OMG, soooooo goooooood. My husband, Triston and I loved it. When I made the sauce, I added a little more sour cream as it was very lemon-y. Soooo delish. In fact, after the meal was over, Bart said, that was the best fish and sauce he's ever had that I've made....I said, "Jaime, baby, Jaime".
