Rotisserie Chicken n Dumplings

I learned how to make Chicken and Dumplings (or shall I say dumplin's like my southern kin folk) from my mother-in-law, Donna, who learned how to make them from her mother-in-law, Maxine. So I guess I should call these Mother-in-Law Chicken and Dumplings but I'm calling this rotisserie chicken and dumplings (how many times can I say chicken and dumplings...) because I made them with a chicken I bought from the store already made and seasoned for me. This makes this dish super easy peasy!!! Seriously, it only took me like 20 minutes to make this. I have the long recipe that was handed down to me from my M-in-L, but one night I had to make something quick because the in laws were coming over so I made the dumplings recipe this way and my father-in-law, Roy, told me it was my best batch yet...little did he know, I wasn't slaving over the stove for hours. So here you go...this is the easiest homemade dumplings recipe you'll ever make, short of bisquick, that is.
Rotisserie Chicken and Dumplings

1 rotisserie chicken (pull all meat off the bones)
2 cartons of chicken broth
1/4 cup milk
Dumplings recipe:
2 cups flour
1 tsp salt
2 tsps baking powder
Milk to make dough (3/4 to 1 cup)
1/3 cup oil
Pour chicken broth into pot and heat on high until it starts to boil. While that is heating up, make your dumplings. Mix all the dumplings ingredients together.
Jaime's tip: Whisk together the dry ingredients so you don't have to sift them. Mix all the ingredients together with spoon until incorporated. Then use your hands to push the dough together. It won't be to soggy and it won't be too dry. My mother-in-law told me the dough should feel like pie dough. Since I've never made homemade pie dough, I really have to guess on this but you will know when you get the right consistency. My M-in-L said not to mess with the dough too much so it won't be super tough, like chewy, but I like my dumplings chewy so I fondle the crap out of this dough...okay, did I just crap???
Flour a surface and roll the dough out. I use one of those flat cutting boards to guide me.
Cut into strips.
Once chicken broth starts to boil, add 1/4 cup milk to broth. Bring back to a boil. Once the broth is boiling, lower to medium high heat and start dropping the strip dumplings into the broth.
Once you get them all in...push them down with a spoon to make sure they are all in the broth.
Let simmer for 20 minutes.
Add chicken and cook for another 5 to 10 minutes and waa laa...you're done!

  3. Ok, I just made the chicken and dumplings and they came out perfect! My family loved it! Alec just had all 4 of his wisdom teeth out today and he said this was the most comforting food he ever had. This dish is great for people that are havining any kind of painful dental procedures or people with no teeth at all! So Yummy!

  4. GREAT! I'm glad you attempted it and you liked it. No teeth??? That would be me....hahaha. I got your msg about the whole wheat flour after the mtg. Did you end up using that? Let me know how it turned out.

  8. Made this two nights ago. Had enough for four meals for a college student like me. :) That's $1.79 a meal!!!!

  10. This is delicious! I like celery and carrots in my chicken and dumplings so I chopped a stalk of celery and a few large carrots and added them to the broth at the very beginning and let them simmer until tender - but other than that - I followed your recipe. Easy and awesome! Thanks!
